Of exporting the piadina romagnola?
Two couples, four different paths meeting. This story begins at the University of Cesena where Gaetano and Federico get to know each other and share university life, especially the part where we have fun. Sooner or later, however, college had to end. In 2013 Gaetano opened “Gli Ingordi” piadineria with his partner Valentina. The kiosk immediately enjoys great popularity. The piadina is delicious, the location is apt, and they have a way with it. Instead, Federico travels and works as a chef in some of the world’s best restaurants. It is in the kitchen that he meets Nina, also a chef, who will become his partner in work and life. In 2017 they decided to return to Italy together. The four of them get together, and between a few beers and a few outings they think bigger. A the project “The Ingordi Lab” is born and comes to life. The rest of the story is still being written.

Gaetano
Said Gae or Tano. Class of 1985, Ravennate but Ferrarese by adoption. He has been making piadinas forever. A graduate of the Istituto Tecnico Agrario di Ravenna, he is attending the University of Cesena. With an explosive personality, sports enthusiast, loves sun, mountains, beer and piadina--with everything you can put into it.

Valentina
Ferrarese, class of 1979 and mother of 3 amazing little girls. Graduated as a Food and Wine Tourism Operator, she has worked in tourism, advertising and promotion of typical products of the Ferrarese territory. Passionate about wine and cooking, she loves to travel and loves experimenting with ethnic and plant-based recipes.

Federico
Class of 1985, a graduate of the Ferrara Hotel School and a graduate of "Food and Catering Sciences" in Cesena. After college he left Italy for 10 years and worked as a chef in the United States, Serbia and Montenegro, Greece and Denmark. He loves backpacking, rock climbing, dancing and listening to good music.

Nina
A Danish national, born in 1987, a graduate of the Copenhagen Hotel Institute, she has worked as a chef in France and in several restaurants in the Danish capital. Very creative and patient-minded, she loves to paint, spend time outdoors, grow herbs, eat cheese and put her own "Nordic" stamp on a bit of everything!
